Ingredients C:
700ml coconut milk
3tbsp rice flour
1tsp salt
3tbsp rice flour
1tsp salt
METHOD
Method for Ingredients A:
1. Prepare the steamer
2. Peel the tapioca and cut
into small pieces
3. Put the tapioca into the
blender and blend with water until smooth
4. Drain the blended tapioca
into a bowl – leave for 15 mins
5. Remove the clear water from
the bowl, take the tapioca starch and mix it with the blended tapioca
6. Divide into two portions
(for the layers)
Method for Ingredients B:
First bottom layer (pandan flavor)
1. Blend the pandan leaves with
the water, then drain
2. Add in the tapioca flour,
sugar and a drop of green food coloring
3. Mix all the ingredients
4. Add in the first portion of blended
tapioca and mix well
5. Pour the mixture into a
container and cover with aluminum foil
6. Steam for 30 mins
Second bottom layer (palm sugar flavor)
1. Cut the palm sugar into
small pieces
2. Mix with water and cook
until the palm sugar dissolve
3. Add in the tapioca flour,
sugar and a drop of brown/yellow food coloring
4. Mix all the ingredients
5. Add in another portion of
blended tapioca and mix well
6. Pour the mixture into the
first cooked bottom layer (pandan flavor)
7. Steam again for another 30
mins
Method for Ingredients C:
1. Mix all the ingredients well
in a pot
2. Cook over medium heat until
thick – make sure you keep stirring
3. Pour over the cooked tapioca
4. You can eat it straight away
or put it in the fridge if you prefer it cold
